Our Denissimo is made from Trebbiano grape must which is naturally caramelized and cooked down to an even greater extent, and aged for EVEN longer in the traditional “Batteria” of Modena. Our exclusive “Denissimo” contains less than 1% barrel aged Italian red wine vinegar for pro-biotic effect, and slowly ages in five different casks comprised of mulberry, ash, oak, juniper, and cherry wood. This exquisite and exceedingly rare 1.36 density balsamic is extremely complex boasting flavor notes of cherry wood, dried fruits, raisins, figs, along with hints of dark chocolate and malt. Serve with your finest cheese plate, drizzle over melon or berries, use as a finishing glaze for roasted meats or poultry, adorn your grilled vegetables, make your desserts swoon. With a 4% acidity, our Four Leaf Quality Equivalent Condiment is exceedingly rich, complex and dense. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.
Aged Pure Maple Balsamic
We have searched high and low, and it appears that we have created the first of its kind, an Aged Pure Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont. This balsamic is outrageously good. Think pancakes, B-B-Q sauce base, waffles, maple balsamic glazed bacon, pork chops, salmon, glazed ham, ice cream, dressings, marinades, chocolate, cake, fruit, the possibilities are endless. It was made to be used with our butter infused olive oil, California toasted almond oil, blood orange fused (agrumato) olive oil. It works well with any number of extra virgin olive oils in our collection.
